Blueberry Cinnamon Muffins

Blueberry/Raspberry Cinnamon Muffins

 I was inspired by a recipe I came across on ReBlinged and as I generally do with recipes – changed it!!.  I like to cook with ingredients that I have had success with, however I like to experience with food too.  And of course I always receive ‘honest’ feedback from my ‘food panel’ – my three children! If you would like to look at the original recipe follow this link https://www.facebook.com/ReBling.ed

 

Ingredients

2 Cups of Spelt FlourBlueberry muffin photo

4 tsp baking powder

1/4 tsp Himalayan Salt

1/2 tsp Cinnamon

1/2 good quality Olive Oil

2/3 Cup Castor Sugar or Brown Sugar (I use this amount of sugar as it’s only needed sweeten you can add more if you choose)

2 Eggs

1 Cup Rice Milk or Almond Milk or Soy Milk (use your favourite milk)

Generous 1/2 Cup of frozen Blueberries

Generous 1/2 Cup of frozen Raspberries

 

Topping

1/2 Teaspoon of Cinnamon

1 Tablespoon of Butter

* Mix Castor Sugar and Cinnamon together in a container or bowl and set aside

 

Method

Heat oven to 180 degrees.  Prepare muffin tray.

Mix all dry ingredients together in one bowl.  Mix all wet ingredients in another bowl.  Pour wet ingredients into dry ingredients while stirring the dry ingredients.  Mix well.  Gently stir in the berries.  Leave some berries to place on the top once mixture has been placed into muffin cups.  Scoop mixture into muffin cups, top with berries and cook at 180 degress for 25 minutes.

After removing muffins from oven and while still hot brush melted butter over the top of the muffins and dip into cinnamon and sugar mixture.

Makes 12 large muffins.  Enjoy hot!

 

The Benefits

While Spelt Flour still does have gluten, it reports to be less of an irritant to those who find it difficult to consume the ‘every day wheat’.  Containing high levels of protein, Spelt Flour is versatile and nutritious.  It also has a ‘nutty’ flavour which can add a lovely dimension to your dish.  Protein is needed for the production of muscle tissue, cell renewal, hormones, enzymes and pretty much all of the body as proteins are broken down into amino acids and those amino acids are rebuilt into more proteins.

The human body requires a diverse range of vitamins, minerals and trace elements to function optimally.  Himalayan Salt, is a product I have only in recent times come to truly appreciate for its health properties.  It’s also the only salt I use know.  It is reported to have 84 Trace Elements and of those elements, many benefit the human body.

Here are a few of the Trace Elements found in Himalayan Salt.

  • Silicon; which supports connective tissue, joints, skin, nails, hair and bones
  • Boron; which can be helpful in ailments such as Arthritis and together with Vitamin D, aid the metabolism of Calcium amongst other benefits
  • Zinc; benefits the immune system, assists in the detoxification of heavy metals, promotes wound healing
  • Calcium; required for strong bones, hormone and muscle function, supports the growth of bone and teeth during infancy

Cinnamon like all spices offer wonderful health benefits.  I believe we are truly blessed to have access to many, many herbs and spices.  Cinnamon contains Calcium, Fibre and Manganese and according to Dr Mercola (http://foodfacts.mercola.com/cinnamon.html ) and a study he refers to in his write up about Cinnamon refers to the enhancement of brain function.  Cinnamon also falls in the ‘yang’ category therefore is a warming aromatic spice which can support circulation.

    Rosetta these sound and look AMAZING. I’m bookmarking this page and as soon as I have an oven again I’m baking these. I really like the ‘Benefits” section – it’s nice to get a feel for the active stuff in the food and how it’s all going to help keep me happy and healthy.
